If you have eaten at Siena’s Grille, you’ve probably seen Nick Corey at work. "And if you’ve tasted the Grille’s food, we think you’ll agree we are very lucky to have Nick in charge of our food and beverage department," said Siena Project Manager Paul Smith. "Nick is perfect for our Tuscan-themed community. His popular Italian restaurant in Chicago was known for being a place where people felt at home. That’s exactly what we want people to feel at Siena too." Just before coming to Siena, Nick was the opening general manager for Nevada Nick’s at The Resort at Summerlin (now the Regent Las Vegas). He had a 20-year career in the food service and entertainment industry in Chicago before moving to Nevada in January 1999. For 10 years, he owned and managed an Italian restaurant, Bravissimo Ristorante, which earned a three-star rating from the Chicago Sun Times. After studying business management at Indiana University, Corey began his food service management career in Chicago for Morton Restaurant’s Arnie’s Café. Eventually, he was corporate supervisor of four establishments simultaneously -- Tango, Maxim’s, Bastille, and the jazz club George’s, for which he also entertainment director
